Ingredients

8 eggs size large
1/2 yellow or red sweet peppers, chopped 100 g
1/2 onions, chopped 100 g
1 tbsp olive oil 15 mL
1 clove garlic, minced
1 tbsp Italian parsley, fresh, chopped 5 g
2 tbsp Parmesan cheese, grated 6 g

Method

  1. In a medium size skillet, heat olive oil over medium heat.
  2. Add red pepper and onion to skillet and sauté until soft.
  3. Add garlic to skillet and stir.
  4. In a medium bowl crack eggs, add parsley and whisk until mixed.
  5. Add eggs with parsley to skillet and cover. Turn heat down to low. Cook until top is just set.
  6. Remove cover, sprinkle parmesan cheese over top and place under broiler until just golden (or replace cover until cheese is melted).
