New Potato Salade with Brie from Here

Ingredients

10 small potatoes 460 g
6 slices bacon, cut in strips 120 g
1/2 cup cream 15% 125 mL
1 tbsp canola oil 15 mL
1 tbsp apple cider vinegar 15 mL
1/2 red onions, thinly sliced 80 g
2 tbsp chives, fresh, finely chopped 6 g
1 cup Brie d'ici cheese, rind removed, then diced 150 g
1 pinch salt [optional]
ground pepper to taste [optional]

Method

  1. In a saucepan filled with salted boiling water, cook the potatoes until tender. Drain and let cool down, then halve. Set aside.
  2. In a frying pan, sauté the bacon until crisp. Remove excess fat with a paper towel. Set aside.
  3. In a salad bowl, delicately mix together the potatoes, bacon, fresh cream, oil, cider vinegar, red onions, chives and Le Brie From Here.
  4. Season with salt and pepper. Serve as a side dish.
