A «fricassee» [pr. FRIHK-uh-see] is a dish of meat that has been sautéed in butter before being stewed with vegetables.

Fricassée just like at the sugar shack! I like cooking with cast iron so I first cooked the onion in oil only - and always keep enough oil to cover the surface. Then I added the chicken and a lot of butter because butter is yum. Once the chicken was golden and crispy, I added the potatoes only to give them a nice crisp as well, then the celery, etc. Instead of covering I deglazed and then lowered the temperature and added just enough chicken broth to avoid caking on the pan. It was pretty dang tasty and filling :) Suggestion: use 2-3 stalks of celery and double the sweet peas.
I didn’t have enough chicken so I added some Italian sausage to make up the difference; it was awesome!
Served over rice, which made it a one dish meal.
